Basic Summer Roll
Fill a shallow plate or pan with warm water.
Soak 1 rice paper sheet at a time, by swirling for about 20 seconds.
Lay on a flat surface.
On the middle lower half, layer lettuce, rice noodles, and cucumber.
Towards the top half, spread shrimp in a row.
In the middle, add mint and cilantro.
Fold the wrapper over the lower half ingredients, then fold over the sides, and continue rolling to wrap closed.
Combine sauce ingredients and serve for dipping.
Colorful Veggie Rolls

Towards the top half, spread a row of overlapping avocado slices.
In the middle, spread a row of alfalfa sprouts.
Fold the wrapper over the lower half ingredients, then fold over the sides, and continue rolling to wrap closed.
Follow the same steps and mix-and-match the other ingredients.
Try layering red cabbage, cooked quinoa, yellow beets, scallion, and radish.
Combine sauce ingredients and serve for dipping.
Fruit Rolls
Follow the same summer roll steps, but use kiwi, strawberries, dragon fruit, mango, and mint.
Combine yogurt, honey, and lime for dipping.
